If you become Roman Catholic are you allowed to support international human rights laws, or is that a sin?

Catholicism is a group. If you join the group as a woman knowing that you can't be a priestess then you can't complain about it later. You joined the group knowing what the outcome would be. If you want you can start your own Church have it exactly the same as Catholicism except with female priestesses.You can even make it that there are no males priests if you want. No one is stopping you from doing this therefore your rights are not being violated. I'm not against female priests, but the facts are that your rights arent violated.
