What do country folks LOVE to EAT?

Im going central florida which is full of farmers, country people, rednecks and you the deal. Its a one day fair. What should I sell to make the most money,what do they like to eat? list anything and everything. to give you a clue, last year some guy was selling deep fried alligator meat...yeah...yummy right.....so please write your ideas of what you know, anything will help THANK YOU
